Raspberry Fudgy Brownies GLUTEN FREE, DAIRY FREE




Hello and Happy Wednesday!
 Today just feels like its going to be a good day.. it could just be because I have just discovered the absolute best fudgy brownie recipe! After only ten minutes out of the oven my mom, brother, and I completely destroyed the pan! But probably the best part is that NO SUGAR, NO BUTTER, NO FLOUR! It's so good for you because of the antioxidants in dark chocolate and the metabolism boosting properties of raspberries! Oh and did I mention they are FANTASTIC!


What you will need:
Brownie
4 eggs
⅓ cup coconut oil
⅓ cup pure maple syrup
2 teaspoons pure vanilla extract
½ cup pure cacao powder
2 tablespoons coconut flour
½ teaspoon baking soda
¼ teaspoon sea salt
⅓ cup chocolate chips
½ cup raspberries
Raspberry Sauce
½ cup additional fresh raspberries
1 tablespoon coconut oil
2 tablespoons pure maple syrup or honey
Preheat oven to 350





Mix your dry ingredients
 (½ cup pure cacao powder, 2 tablespoons coconut flour, ½ teaspoon baking soda, and ¼ teaspoon sea salt.)
Note: for the coconut flower, simply because I do not have it on hand, I put coconut flakes into a coffee bean grinder.

Mix the wet ingredients together
(4 eggs, ⅓ cup coconut oil, ⅓ cup pure maple syrup, 2 teaspoons pure vanilla extract, ½ cup pure cacao powder.)

Set aside and make the sauce (yummmmm)
Mix ½ cup additional fresh raspberries, 1 tablespoon coconut oil, 2 tablespoons pure maple syrup in a pan.

Sir it together on a low to medium heat.

 Turn off heat and set aside. 

Mix the dry and wet ingredients, that you set aside earlier, together.

Fold in ⅓ cup chocolate chips  ½ cup raspberries.

Grease 8x8 pan and scrape the batter into it.

 Pour your delicious sauce from earlier and mix in.
Bake for around 40-60 min depending on your oven, I personally found that it was around an hour but the original recipe from http://www.primallyinspired.com/raspberry-fudge-brownies-grain-dairy-nut-free/

Sit back relax eat a yummy fudgy raspberry brownie and sip some green tea (look forward to a post about the health benefits of green tea)
